The Strange Science of the Impossible Burger

So I've had the Impossible Burger 3 times now at different places and each one is wildly inconsistent with the other. Is that how the Impossible Burger people planned it to be cooked? Kind of hard to recommend to others if it's going to not taste the same from one place to the next. UNLESS...I am thinking about the Impossible Burger all wrong. Is it supposed to be an ingredient instead of a dish? Like...should I be thinking of it as something more along the lines of lettuce (which can be prepared in a number of ways)?

I dunno, overall, if this is the future of food, it's not so great so far.

Salvation Burger and The Spotted Pig are home to these delicious burgers

Two burgers on my list of must-try eats in NYC are the ones at Salvation Burger and The Spotted Pig. This New York Times article sums up quickly why these burgers reign king at the moment among all of the other equally-delicious burger offerings in NYC. It's funny that NYC has sort of become a burger town in the last few years with plenty of high profile chefs and restaurants offering their own take on the classic American meal. I welcome them all. If NYC becomes burger town, I'd be ok with that.
